I thought I\u2019d made it clear to the program I\u2019d selected that my knowledge was minimal at best yet ended up with a delightful group of thirty-somethings, all way more skilled than I. (In fairness, age has corrupted my ability to remember vocabulary. However, the instructor, a lovely guy, moved very fast assuming that we understood him. Not me.)<\/h3>\n<h3>Lessons were from nine am to one pm starting at a different coffee shop each day.\u00a0 It was chilly early in the day and three-plus hours on a hard chair taxed my butt mightily. The best part of the lessons was the last forty-five minutes when the group moved to a cultural space to\u00a0 introduce us to CDMX. We went to spots in beautifully maintained Chapultepec Park, to the Temple Major Museum (ruins excavated when the Metro was being built);\u00a0 to the Museo Vivo de Muralismo to see frescos by Diego Riviera<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-5240\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/diego-mural-300x240.webp\" alt=\"\" width=\"300\" height=\"240\" srcset=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/diego-mural-300x240.webp 300w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/diego-mural-1024x819.webp 1024w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/diego-mural-768x614.webp 768w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/diego-mural.webp 1500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>and to the Jamaica Market that sells everything under the sun but specializes in flowers. The cultural visits continued with one to a pavilion from the people of Lebanon to Mexico and further explorations in Chapultepec Park.<\/h3>\n<div id=\"attachment_5245\" style=\"width: 267px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5245\" class=\"size-medium wp-image-5245\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/Olmec-257x300.jpg\" alt=\"\" width=\"257\" height=\"300\" srcset=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/Olmec-257x300.jpg 257w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/Olmec.jpg 548w\" sizes=\"auto, (max-width: 257px) 100vw, 257px\" \/><p id=\"caption-attachment-5245\" class=\"wp-caption-text\">Olmec head<\/p><\/div>\n<h3>It was fun seeing different parts of this fascinating city but I can\u2019t say that my Spanish is fluent. However, I\u2019m able to get what I need and even communicate with the lovely woman who cleans once\u00a0 a week. (Let&#8217;s hear it for Google Translate!)<\/h3>\n<h3>This is said to be an easy recipe for black bean and beef tostadas. Based on the food here, it\u2019s a total hack but is vaguely reminiscent of the real thing. To be authentic you should serve with many bottles of hot sauce, one more incendiary than the last.<\/h3>\n<div id=\"attachment_5247\" style=\"width: 179px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5247\" class=\"size-medium wp-image-5247\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/hotsaucejpg-169x300.jpg\" alt=\"\" width=\"169\" height=\"300\" srcset=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/hotsaucejpg-169x300.jpg 169w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2026\/03\/hotsaucejpg.jpg 360w\" sizes=\"auto, (max-width: 169px) 100vw, 169px\" \/><p id=\"caption-attachment-5247\" class=\"wp-caption-text\">A very small selection of what&#8217;s available<\/p><\/div>\n<ul>\n<li>\n<h3>1\/2 pound lean ground beef<\/h3>\n<\/li>\n<li>\n<h3>1 can (10 ounces) diced tomatoes and green chiles, undrained<\/h3>\n<\/li>\n<li>\n<h3>1 can (15 ounces) black beans, rinsed and drained<\/h3>\n<\/li>\n<li>\n<h3>1 can (16 ounces) refried beans, warmed<\/h3>\n<\/li>\n<li>\n<h3>8 tostada shells<\/h3>\n<\/li>\n<li>\n<h3>Optional: Shredded cheese<\/h3>\n<\/li>\n<\/ul>\n<ol>\n<li>\n<h3>In a large skillet, cook beef over medium-high heat until no longer pink, 4-6 minutes; breaking up beef into crumbles. Stir in tomatoes; bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost evaporated, 6-8 minutes. Stir in black beans; heat through.<\/h3>\n<\/li>\n<li>\n<h3>To serve, spread refried beans over tostada shells. Top with beef mixture; add cheese.<\/h3>\n<\/li>\n<\/ol>\n<h2>Pour a nice glass of Mexican beer like the lighter Corona, Pacifico, Tecate, and Victoria or a dark option such as Modelo Especial, Negra Modelo, and Bohemia.
