{"id":1740,"date":"2012-10-13T15:29:40","date_gmt":"2012-10-13T15:29:40","guid":{"rendered":"http:\/\/marigoldonline.net\/?p=1740"},"modified":"2012-10-13T15:29:40","modified_gmt":"2012-10-13T15:29:40","slug":"birds-of-a-feather","status":"publish","type":"post","link":"https:\/\/marigoldonline.net\/?p=1740","title":{"rendered":"Birds of a Feather"},"content":{"rendered":"<p style=\"text-align: center;\">\u00a0<a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/dumbo.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1741\" title=\"dumbo\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/dumbo.jpg\" alt=\"\" width=\"275\" height=\"183\" \/><\/a><\/p>\n<dl id=\"attachment_1741\" class=\"wp-caption aligncenter\" style=\"width: 285px;\">\n<dd class=\"wp-caption-dd\">DUMBO beneath the Brooklyn Bridge<\/dd>\n<\/dl>\n<p>In Manhattan we have Dumbo (Down Under the Brooklyn Bridge), NoHo (North of Houston) and FiDi (the Financial District.)\u00a0 Not to be outside the acronym loop, there is a splendid restaurant in southern Vermont with the moniker \u201cSoLo,\u201d named for its location, South Londonderry.\u00a0 Solo has a creative, farm-to-table menu and is housed in an old house giving each room a slightly different personality. There is a good-looking bar in the front room and a handsome wine storage \u201croom\u201d adjacent to where we sat.<\/p>\n<p>The Autumn Salad with local kale, fall lettuces, caramelized apples and sweet onions was incredibly fresh with a dressing made of a sheep\u2019s milk cheese from Woodcock Farm, billed as \u201cAutumn Snow.\u201d The pheasant for two from nearby Someday Farm was a treat especially as I never have and never plan to do pheasant. <a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/pheasant.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1742\" title=\"pheasant\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/pheasant.jpg\" alt=\"\" width=\"269\" height=\"187\" \/><\/a><\/p>\n<p>This bird was brined overnight and came with roasted and saut\u00e9ed veggies including squash, cauliflower and lobster mushrooms which are actually a fungus that look lobster-like due to their color. All four diners gave the food three cheers.<\/p>\n<div id=\"attachment_1743\" style=\"width: 285px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/lobstermush.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1743\" class=\"size-full wp-image-1743\" title=\"lobstermush\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/lobstermush.jpg\" alt=\"\" width=\"275\" height=\"183\" \/><\/a><p id=\"caption-attachment-1743\" class=\"wp-caption-text\">Lobster mushroom in all its glory<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>Whatever happened to that dish of bygone days, pheasant under glass? Sounds like something Omar Sharif would have ordered for Barbara in <em>Funny Girl. <\/em>Technically it\u2019s roast pheasant breast in a rich sauce of mushrooms or truffles, cognac and cream served under a <em>cloche <\/em>aka, a glass dome. The dome was removed with a flourish by an attendant waiter so the aromas wafted upwards to the diner before he (somehow I don\u2019t see this as a women\u2019s treat) dug in.<\/p>\n<div id=\"attachment_1745\" style=\"width: 289px\" class=\"wp-caption alignright\"><a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/waiter-wcloche.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1745\" class=\"size-full wp-image-1745\" title=\"waiter wcloche\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/waiter-wcloche.jpg\" alt=\"\" width=\"279\" height=\"180\" \/><\/a><p id=\"caption-attachment-1745\" class=\"wp-caption-text\">A metal cloche but the concept is identical<\/p><\/div>\n<p>Talking of PUG reminded someone of a lower-brow dish also with an \u2018accessory.\u2019 Beer Can Chicken (or, as it\u2019s also known, Beer Butt Chicken) is said to yield a very tender, moist chicken. (It\u2019s also something I\u2019ve never attempted.) There are innumerable variations including the use of a vertical roaster that the chicken perches on as well as differing points of view on the kind of beer to use.\u00a0 I\u2019ll leave the beer aficionados to respond.<\/p>\n<p>Here is a recipe for Beer Can Chicken. Yes, it\u2019s a bit late in the year for an outdoor grill recipe but that\u2019s how it goes (and some of us grill outdoors whatever the weather.)<\/p>\n<p><a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/beer-can-chicken-a.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1746\" title=\"beer-can-chicken-a\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/beer-can-chicken-a-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/beer-can-chicken-a-300x200.jpg 300w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/10\/beer-can-chicken-a.jpg 520w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>1 4-pound whole chicken<\/p>\n<p>2 Tbsp olive oil or other vegetable oil<\/p>\n<p>1 opened, half-full can of beer, at room temperature<\/p>\n<p>1 T kosher salt<\/p>\n<p>2 T chopped fresh thyme leaves, or 1 T dried thyme<\/p>\n<p>1 T freshly ground\u00a0 black pepper<\/p>\n<p>Prepare grill for indirect heat. If using charcoal, put the coals on one side of the grill only. If using a gas grill, fire up half of the burners.<\/p>\n<p>Remove neck and giblets from cavity of chicken. Rub chicken all over with olive oil. Mix salt, pepper, and thyme in small bowl and sprinkle over chicken.<\/p>\n<p>Open beer can and be sure it is only half filled. If you like beer, drink the rest. Lower chicken onto the open can, so that chicken sits upright, the can in its cavity. Place the chicken on the cool side of the grill, using the legs and beer can as a tripod to support it.<\/p>\n<p>Cover grill and walk away. After an hour, check chicken and refresh coals if needed (only with a charcoal grill). Continue to check chicken roughly every 15 minutes, until a meat thermometer inserted into the thickest part of the thigh reads 160\u00b0F &#8211; 165\u00b0F. A four pound bird should take about 1 \u00bd hours.<\/p>\n<p>(If you don&#8217;t have a meat thermometer, poke it deeply in the thigh. If juices run clear, the bird is good to go.)<\/p>\n<p>Carefully transfer chicken to serving tray. Warning: beer can and beer is very hot. Let chicken rest for 10 minutes and then lift off the can and pull out can with tongs.<\/p>\n<p>Or, make a reservation at Solo and let them roast a bird for you.
