Mayor Bloomberg says he likes the color which is \u201ceasy to spot\u201d&#8211; I concur but the livery drivers whose cabs these will be are not happy. \u201cMy cab is my personal car,\u201d said one driver (whom I\u2019m paraphrasing) and I don\u2019t want to drive a minty green car.\u201d\u00a0 He has a point.<\/p>\n<p>Green is the color of spring which is reluctantly arriving, probably to be followed instantaneously by blazing summer.\u00a0 Driving to Woodstock, NY last weekend, it was wonderful to see the trees in leaf with that distinctive, tender, early green.<\/p>\n<div id=\"attachment_1399\" style=\"width: 294px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/greentree.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1399\" class=\"size-full wp-image-1399\" title=\"greentree\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/greentree.jpg\" alt=\"\" width=\"284\" height=\"177\" \/><\/a><p id=\"caption-attachment-1399\" class=\"wp-caption-text\">Oak in early leaf<\/p><\/div>\n<p>As to Woodstock itself, it\u2019s a bit too popular. Given the crowds on the narrow sidewalks and in the restaurants, if it\u2019s like this in mid-April, it must be fierce in mid-summer.<\/p>\n<p>&nbsp;<\/p>\n<p>When you need to bring a present to a baby shower\u00a0 and the mother doesn\u2019t know the baby\u2019s gender, green is often the default choice. Thumbs up on not electing to know&#8211;one of life\u2019s good surprises.<\/p>\n<p><a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1400\" title=\"kale\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale.jpg\" alt=\"\" width=\"250\" height=\"202\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Green is also the color of kale, currently\u00a0 topping the veggie trend list.\u00a0 Kale is a very good source of Vitamin K, vitamin C, iron and calcium and popular world over. Until writing this entry, I never realized that ornamental kales can also be eaten. I\u2019ve been serving kale as a vegetable for years by chopping it roughly, saut\u00e9ing a little garlic in oil and then saut\u00e9ing the kale until tender, finishing it with balsamic vinegar to taste. I ate a kale salad\u00a0 in a Woodstock restaurant which shall go unnamed. The salad was delicious&#8211;other things, not so much.<a href=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale-salad.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1401\" title=\"kale salad\" src=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale-salad-300x247.jpg\" alt=\"\" width=\"300\" height=\"247\" srcset=\"https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale-salad-300x247.jpg 300w, https:\/\/marigoldonline.net\/wp-content\/uploads\/2012\/05\/kale-salad.jpg 460w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Kale Salad<\/strong><\/p>\n<p>2 tablespoons dried currants<\/p>\n<p>7 tablespoons white balsamic vinegar, divided (regular balsamic works fine)<\/p>\n<p>1 tablespoon unseasoned rice vinegar<\/p>\n<p>1 tablespoon honey<\/p>\n<p>1 tablespoon extra-virgin olive oil<\/p>\n<p>1 teaspoon salt<\/p>\n<p>2 bunches Tuscan kale (about 1 pound), center ribs and stems removed, leaves thinly sliced crosswise<\/p>\n<p>2 tablespoons pine nuts, lightly toasted<\/p>\n<p>Parmesan cheese shavings<\/p>\n<p>Put currants in small bowl; add 5 tablespoons balsamic vinegar and let soak overnight. Drain currants. (If, like me, you\u2019re more of a spur of the moment cook, let currants sit in vinegar a few minutes.)<\/p>\n<p>Whisk remaining 2 tablespoons white balsamic vinegar, rice vinegar, honey, oil, and salt in large bowl. Add kale, currants, and pine nuts; toss to coat. (Let marinate 20 minutes at room temperature, tossing occasionally. MG\u2019s note: I never did this feeling it would wilt kale too much. Your call.) Season to taste with salt and pepper.
